Description Starch is the main component in Chinese chestnut (Castanea mollissima Blume) seed kernels (CCSK), which are a nutritious nut as well as a for the food industry. Due to this starchy property, CCSK may be developed as a potential fermentation substrate and raw material for biological purposes in non-food industry. To obtain high quality and high quantity chestnut starch and widen its application in industry, it is necessary to evaluate the characteristics of starch accumulation and its molecular regulatory mechanism in developmental stages of CCSK.
